Mo Roasted Parsnips


Hi know parsnips should be parboiled before roasting, but I also know it's 10PM and I am very tired! I find those delicious anyway. 
Peel two parsnips, cut into long pieces, drizzle some olive oil on top, a table spoon of honey, a pinch of salt and a pinch of pepper. Mix everything and bake for 35-45 minutes at 200 degrees (they should be tender in the middle but quite crunchy on outside)
